Irish Soda Bread Muffins

  • 2 ¼ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ⅓ cup granulated sugar
  • 1 cup mixed dried fruit raisins or currants
  • 1 cup buttermilk
  • 1 large egg
  • 6 tablespoons melted butter

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Lightly coat a muffin pan with cooking spray or line with paper cups.
  2. In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and dried fruit.
  3. In a separate bowl, whisk together the egg, buttermilk, and melted butter.
  4. Make a well in the dry ingredients and pour in the wet ingredients. Gently mix with a spatula, being careful not to overmix.
  5. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  6. Sprinkle the tops with sparkling sugar (optional).
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack.
  9. Serve warm with butter, jam, or honey.
