How to Make Chocolate Strawberry Yogurt Clusters
- In a large bowl, combine finely chopped strawberries, plain Greek yogurt, honey, and a splash of vanilla extract. Mix everything together until it's beautifully blended for about 2-3 minutes.
- Using a tablespoon, scoop around 2 tablespoons of the yogurt mix and gently form small clusters on a parchment-lined baking sheet or plate. Aim for about 10 clusters so everyone can enjoy!
- Place the baking sheet in the freezer and allow the clusters to freeze completely for 1-2 hours. They should be solid and firm to the touch.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 15- to 30-second intervals, stirring until the mixture is melted and silky smooth—this should take about 1-2 minutes.
- Take the frozen clusters from the freezer. Using a spoon, dip each cluster into the melted chocolate, ensuring they’re fully coated. Use the back of the spoon to shake off any excess chocolate.
- Place the coated clusters back on the baking sheet and return them to the freezer for a few more minutes until the chocolate hardens. Enjoy these delightful bites straight from the freezer for the best texture!
