- Prepare the Tomato Topping: In a medium-sized bowl, combine the diced tomatoes, chopped basil, minced garlic, balsamic vinegar, and extra virgin olive oil. Season with sea salt and black pepper to taste. Mix everything together until well combined. Set the mixture aside to allow the flavors to meld while you prepare the toasts.
- Prepare the Baguette Slices: Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet in a single layer. Brush each slice with extra virgin olive oil on both sides. If you’re adding Parmesan cheese, sprinkle it over the top of each slice before toasting.
- Toast the Baguette: Place the baking sheet in the preheated oven and bake the baguette slices for about 5-7 minutes, or until they are golden brown and crispy. If using Parmesan, the cheese should be melted and slightly golden.
