Ingredients
  

For the Jalebi Batter
  • 1 cup All-Purpose Flour
  • 1/4 cup Gram Flour Can be omitted if unavailable
  • 2 tablespoons Cornflour (Cornstarch) Tapioca starch is a substitute
  • 1/4 teaspoon Baking Soda No substitutions recommended
  • 1/2 teaspoon Orange Food Color Natural food dyes can be used
  • 1 cup Full-Fat Yogurt Vegan yogurt can be used
  • 1 cup Water Adjust as necessary
  • for frying Cooking Oil Any neutral oil with a high smoke point
For the Sugar Syrup
  • 1 cup Water
  • 1 cup Granulated Sugar No substitutions recommended
  • 3 pods Green Cardamom Can substitute with cinnamon
  • 1 tablespoon Kewra Water Can be omitted

Method
 

Preparation
  1. In a mixing bowl, combine all-purpose flour, gram flour, cornflour, baking soda, orange food color, and yogurt.
  2. Gradually add water while whisking until a smooth, flowing batter forms.
  3. Transfer the batter into a squeeze bottle or piping bag.
Cooking
  1. In a separate pot, boil water, green cardamom, and granulated sugar for 5-8 minutes until it reaches one-string consistency.
  2. In a deep pan, heat oil over medium-low heat. Once hot, pipe the batter into spirals in the oil.
  3. Fry each jalebi for 2-3 minutes on each side until crispy and golden brown.
  4. Transfer jalebis to the warm sugar syrup for 30-40 seconds on each side to soak.
  5. Remove from syrup and serve immediately.
