Hearty Vegetable and Egg Bake with Garlic Dill Sauce

  • 1 Leek, cleaned and sliced
  • 3 Carrots, peeled and grated
  • 4 Potatoes, peeled and grated
  • 1 Red Bell Pepper, finely chopped
  • 50g Spinach, chopped
  • Green Onions, chopped
  • Dill and Parsley, chopped
  • 4 Eggs
  • Salt, to taste
  • 4 tablespoons Olive Oil
  • 4 tablespoons Flour
  • 1 teaspoon Baking Powder
  • 4 tablespoons Milk
  • Basil, chopped
  • 1 teaspoon Dried Garlic
  • Black Pepper, to taste
  • A small piece of Mozzarella Cheese, grated
  • 1 tablespoon Mayonnaise
  • 1 tablespoon Greek Yogurt or Sour Cream
  • More Dill, for garnish
  • 1 clove Garlic, minced

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. In a large mixing bowl, combine the grated potatoes, carrots, sliced leek, chopped red bell pepper, and spinach. Mix well to ensure the vegetables are evenly distributed.
  3. In another bowl, whisk together the eggs, olive oil, flour, baking powder, and milk.
  4. Add salt, black pepper, dried garlic, and basil. Stir until the mixture is smooth.
  5. Add the egg mixture to the vegetables and mix well to coat everything evenly.
  6. Fold in the chopped dill, parsley, and green onions.
  7. Grease a baking dish with a little olive oil or line it with parchment paper.
  8. Pour the vegetable and egg mixture into the dish.
  9. Sprinkle the grated mozzarella cheese evenly over the top.
  10. Place the dish in the preheated oven and bake for about 30 minutes, or until the top is golden and the center is set.
  11. While the bake is in the oven, mix together mayonnaise, Greek yogurt or sour cream, minced garlic, and additional dill in a small bowl.
  12. Set aside for serving.
  13. Once the vegetable bake is cooked, remove it from the oven and let it cool slightly before serving.
  14. Serve with the prepared sauce on the side.
