Preparation
- Prepare the IngredientsBegin by peeling and cubing the potatoes. Place them in a pot and cover with water. Bring to a boil and cook for 15-20 minutes until they are fork-tender. Drain the potatoes and set them aside.
- Cook the BaconHeat 1 tablespoon of olive oil in a large pan over medium heat. Add the chopped bacon and cook until it turns crispy and golden brown. Remove from the pan and set aside, keeping the rendered bacon fat in the pan for flavor.
- Sauté the Onion and GarlicIn the same pan, add the chopped onion and minced garlic. Sauté them over medium heat until they become fragrant and the onion softens, about 3-4 minutes. Be sure to scrape up any bits of bacon from the pan to incorporate their flavor into the onions and garlic.
- Cook the MushroomsAdd the sliced mushrooms to the pan and cook them until they become golden and tender, around 5 minutes. Stir occasionally to prevent burning.
- Add the VegetablesOnce the mushrooms are cooked, add the diced bell pepper and carrots. Season with salt and black pepper, and cook for another 3-4 minutes, stirring occasionally, until the vegetables begin to soften.
- Cook the ChickenPush the sautéed vegetables to the side of the pan and add another tablespoon of olive oil to the empty space. Add the diced chicken to the pan and season with salt, sweet paprika, and black pepper. Cook the chicken until it is browned on all sides, about 5-7 minutes.
- Combine the IngredientsIn a large mixing bowl, combine the cooked potatoes, sautéed vegetables and chicken, crispy bacon, sweet corn, pineapple, and cooked pork. Stir gently to combine all the ingredients thoroughly.
- Prepare the DressingIn a small bowl, pour boiling water over the finely chopped small onion. Let it sit for about 5 minutes to blanch it, then drain and add the onion to the casserole mixture. Add the sliced olives and mayonnaise to the mixture. Stir everything together and adjust the seasoning with more salt if necessary.
- Assemble and BakePreheat your oven to 200°C (400°F). Transfer the casserole mixture to a greased casserole dish and drizzle the remaining olive oil on top. Bake for 20-25 minutes, or until the top is golden and slightly crispy. If you prefer a crunchier top, broil the casserole for an additional 2-3 minutes.
- ServeOnce the casserole is done, remove it from the oven and let it cool for a few minutes before serving. Garnish with fresh herbs if desired, and enjoy!
