Healthy Energy Muffins Without Added Sugar

Recipe card for Healthy Energy Muffins Without Added Sugar.
Course: Breakfast

Ingredients

Ingredients
  • 1 medium banana, mashed (about ½ cup): Provides natural sweetness and moisture, eliminating the need for added sugar.
  • 1 cup milk: Adds creaminess and moisture to the batter.
  • ¼ cup pure maple syrup: A natural sweetener that also adds a subtle caramel-like flavor.
  • 2 eggs: Acts as a binder and adds protein, helping the muffins rise and hold their shape.
  • ¼ cup natural peanut butter: Adds healthy fats, protein, and a rich, nutty flavor.
  • 2 cups oats (quick, minute, or rolled): The base of the muffins, providing fiber and a hearty texture.
  • ½ cup chocolate protein powder: Boosts the protein content and adds a chocolatey taste.
  • ¼ cup unsweetened cocoa powder: Intensifies the chocolate flavor without adding sugar.
  • 2 teaspoons baking powder: Helps the muffins rise, making them light and fluffy.

Method

Preparation
  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a muffin tin or line it with paper muffin liners.
  2. Mix the Wet Ingredients: In a large mixing bowl, mash the banana until smooth. Add the milk, pure maple syrup, eggs, and natural peanut butter. Whisk until all the ingredients are well combined and smooth.
  3. Add the Dry Ingredients: In a separate bowl, mix the oats, chocolate protein powder, unsweetened cocoa powder, and baking powder. Gradually add the dry ingredients to the wet mixture, stirring until just combined. The batter should be thick but pourable.
  4. Portion the Batter: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  5. Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  6. Cool and Serve: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy them warm or at room temperature.
