Ingredients
  

For the Shrimp
  • 1 pound Large Shrimp can swap with grilled chicken
  • 2 tablespoons Olive Oil marinating
  • 1 teaspoon Paprika or chili powder
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1/4 teaspoon Cayenne Pepper optional
For the Salsa
  • 1 cup Frozen Corn thawed
  • 1/4 cup Red Onion diced
  • 2 tablespoons Cilantro chopped
  • 1 tablespoon Jalapeño minced, optional
  • 1 tablespoon Lime Juice to taste
For the Creamy Sauce
  • 1/4 cup Mayonnaise or yogurt
  • 1/4 cup Sour Cream or Greek yogurt
  • 1 tablespoon Lemon Juice or lime juice
  • 2 cloves Garlic fresh, minced
For Assembly
  • 1 medium Avocado sliced or mashed
  • 1 tablespoon Sesame Seeds for garnish
  • 2 tablespoons Green Onions chopped, for garnish

Method
 

Grilled Shrimp Bowl
  1. In a medium bowl, toss the large shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper if you love heat. Ensure they're evenly coated and marinate for about 10 minutes.
  2. In another bowl, combine thawed frozen corn, diced red onion, minced jalapeño (if using), chopped cilantro, lime juice, and a pinch of salt. Mix gently and set it aside to let the flavors meld.
  3. Preheat your grill to medium heat, then grill the shrimp for 2-3 minutes on each side until they turn pink and opaque.
  4. In a small bowl, whisk together mayonnaise, sour cream, chopped cilantro, lemon juice, minced garlic, and a dash of salt and black pepper until smooth and creamy.
  5. Begin layering your bowl with the corn salsa at the base. Add the grilled shrimp on top, followed by slices or chunks of creamy avocado. Drizzle generously with the creamy garlic sauce and garnish with sesame seeds and chopped green onions.
