Grilled Shrimp Bowl
- In a medium bowl, toss the large shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper if you love heat. Ensure they're evenly coated and marinate for about 10 minutes.
- In another bowl, combine thawed frozen corn, diced red onion, minced jalapeño (if using), chopped cilantro, lime juice, and a pinch of salt. Mix gently and set it aside to let the flavors meld.
- Preheat your grill to medium heat, then grill the shrimp for 2-3 minutes on each side until they turn pink and opaque.
- In a small bowl, whisk together mayonnaise, sour cream, chopped cilantro, lemon juice, minced garlic, and a dash of salt and black pepper until smooth and creamy.
- Begin layering your bowl with the corn salsa at the base. Add the grilled shrimp on top, followed by slices or chunks of creamy avocado. Drizzle generously with the creamy garlic sauce and garnish with sesame seeds and chopped green onions.
- Enjoy your Grilled Shrimp Bowl immediately while it's warm and flavorful.

Notes
For an extra zing, add a squeeze of fresh lime on top before serving. Ideal for serving fresh, avoid reheating after assembly for best results.
