Ingredients
  

For the Salmon
  • 4 fillets Salmon (skin-on) fresh fillets for best grilling results
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 tablespoon Brown Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/4 teaspoon Cayenne Pepper optional for extra kick
For the Peach Salsa
  • 2 cups Peaches firm, ripe
  • 1 cup Avocado add just before serving
  • 1/2 cup Red Onion diced
  • 1/4 cup Fresh Cilantro chopped
  • 2 tablespoons Citrus Juice Lime or Lemon
  • 1 medium Jalapeño optional

Method
 

Prepare the Salmon
  1. Combine smoked paprika, garlic powder, onion powder, brown sugar, salt, black pepper, and cayenne in a small bowl. Rub the seasoning all over the salmon fillets and let them chill in the fridge for 15 minutes.
Make the Salsa
  1. In a mixing bowl, combine diced peaches, avocado, red onion, cilantro, lime juice, jalapeño (if using), and a pinch of salt. Stir carefully and refrigerate until ready to serve.
Grill the Salmon
  1. Preheat the grill to about 500°F. Lightly brush the salmon with oil and grill skin-side up for 2-4 minutes until seared. Flip and grill skin-side down for another 3-4 minutes until opaque and flaky.
Serve
  1. Allow the salmon to rest for a few minutes. Top with peach salsa just before serving, garnishing with extra cilantro or lime wedges if desired.
