- Mix Wet Ingredients: In a bowl, combine 60 g milk, 30 g melted unsalted butter, and 2 g salt. Mix well.
- Combine Dry Ingredients: In another bowl, mix 150 g cake flour, 2 g yeast, and 1 g baking soda with a spatula.
- Form Dough: Add the wet ingredients to the dry ingredients. Mix until a lump forms.
- Prepare Add-ins: Cut 35 g of green onions (use only the green part) into small pieces.
- If using, add 10 g sesame seeds.
- Knead Dough: Briefly knead the dough to incorporate the green onions and sesame seeds.
- Rest Dough: Cover the dough with cling wrap and let it rest for 30 minutes.
- Roll Out Dough: After resting, place the dough between two sheets of baking paper. Press lightly with your hands and then roll out into a rectangular shape. Aim for thin dough for crispy crackers.
- Cut and Poke Dough: Use a crinkle cut knife to trim the edges for a neat appearance.
- Cut the dough into bite-sized pieces.
- Poke each piece with a fork to prevent puffing during baking.
- Bake Crackers: Preheat the oven to 170°C (338°F).
- Place the crackers on an oven pan lined with baking paper.
- Bake for 15 minutes or until golden brown and crispy.
- Serve: Let the crackers cool completely before serving.
