Grandma’s Cauliflower Fritters

  • 1 cauliflower head
  • 1 onion, finely chopped
  • Parsley, finely chopped
  • 2 eggs
  • 5 tablespoons (50g) breadcrumbs
  • 5 tablespoons (50g) cornmeal
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • Italian herbs, to taste
  • 2 teaspoons baking soda
  • 150g grated cheese
  • Salt, to taste
  • Pepper, to taste
  • Olive or vegetable oil, for frying

Method
 

Preparation
  1. Begin by washing the cauliflower and breaking it into small florets. Boil or steam the cauliflower until tender, then let it cool and mash it slightly with a fork.
  2. In a large bowl, combine the mashed cauliflower, finely chopped onion, parsley, eggs, breadcrumbs, cornmeal, oregano, paprika, Italian herbs, baking soda, grated cheese, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Heat a generous amount of olive or vegetable oil in a frying pan over medium heat.
  4. Scoop spoonfuls of the cauliflower mixture and shape them into small patties. Carefully place the patties into the hot oil.
  5. Fry the patties until golden brown on both sides, approximately 3-4 minutes per side. Drain on paper towels to remove excess oil.
  6. Serve the fritters hot, garnished with extra parsley if desired.
