  • 130g (1 cup) Pumpkin Seeds
  • 140g (1/2 cup + 1 tablespoon) Banana Pulp
  • A pinch of Salt

Preparation
  1. Preheat: Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper to prevent sticking.
  2. Mix Ingredients: In a mixing bowl, combine the sesame seeds, pumpkin seeds, and banana pulp. The banana acts as a natural sweetener and binder for the cookies.
  3. Add Salt: Add a pinch of salt to enhance the flavors of the seeds and banana.
  4. Combine: Mix all the ingredients well until everything is evenly combined and the mixture holds together.
  5. Form Cookies: Take small portions of the mixture and form them into balls. Place each ball on the prepared baking sheet and flatten slightly to form cookie shapes. The mixture might be sticky; if so, wet your hands slightly to make handling easier.
  6. Bake: Place the baking sheet on the lower rack of the preheated oven. Bake the cookies for approximately 15-20 minutes, or until they are golden and firm.
  7. Cool: Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  8. Texture: Once cooled, the cookies will be slightly crunchy on the outside with a chewy interior.
