Preparation
- Gather and season your shrimp with salt, black pepper, sweet paprika, and garlic powder. Mince the garlic and chop the onion and cilantro.
Cooking
- In a large skillet over high heat, combine olive oil and unsalted butter. Once melted, add the shrimp in a single layer and sear for 1 minute on each side until lightly browned. Remove the shrimp from the skillet.
- Lower the heat to low and add minced garlic and diced onion to the skillet. Sauté for about 3 minutes until soft and fragrant.
- Add ¾ of the can of coconut milk to the skillet and stir in the cornstarch. Mix until well combined and simmer for 2 minutes to thicken slightly.
- Pour in the fish sauce, honey, and lime juice, stirring well. Allow the mixture to heat through.
- Add the seared shrimp back into the skillet and toss to coat in the creamy sauce. Heat through for an additional minute.
- Taste and adjust seasoning with more fish sauce or lime juice if needed. Serve immediately, garnished with fresh cilantro, chili flakes, and cracked black pepper.
