Ingredients
  

For the Shrimp
  • 1 lb Shrimp, peeled and deveined
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Sweet Paprika
  • 1 tsp Garlic Powder
For the Sauce
  • 2 tbsp Unsalted Butter
  • 2 tbsp Olive Oil can be substituted with vegetable oil
  • 4 cloves Garlic, minced
  • 1 medium Yellow Onion, diced
  • 1 can Unsweetened Coconut Milk, 14 oz full-fat preferred
  • 2 tsp Cornstarch optional thickening agent
  • 2 tbsp Fish Sauce can substitute with soy sauce
  • 1 tsp Honey
  • 2 tbsp Lime Juice
For Garnishing
  • 2 tbsp Fresh Cilantro, chopped
  • Chili Flakes optional
  • Freshly Cracked Black Pepper

Method
 

Preparation
  1. Gather and season your shrimp with salt, black pepper, sweet paprika, and garlic powder. Mince the garlic and chop the onion and cilantro.
Cooking
  1. In a large skillet over high heat, combine olive oil and unsalted butter. Once melted, add the shrimp in a single layer and sear for 1 minute on each side until lightly browned. Remove the shrimp from the skillet.
  2. Lower the heat to low and add minced garlic and diced onion to the skillet. Sauté for about 3 minutes until soft and fragrant.
  3. Add ¾ of the can of coconut milk to the skillet and stir in the cornstarch. Mix until well combined and simmer for 2 minutes to thicken slightly.
  4. Pour in the fish sauce, honey, and lime juice, stirring well. Allow the mixture to heat through.
  5. Add the seared shrimp back into the skillet and toss to coat in the creamy sauce. Heat through for an additional minute.
  6. Taste and adjust seasoning with more fish sauce or lime juice if needed. Serve immediately, garnished with fresh cilantro, chili flakes, and cracked black pepper.
