Method
 

Making the Meatloaf
  1. In a large bowl, whisk together the milk and beaten eggs until well blended.
  2. Stir in the panko breadcrumbs, grated Parmesan cheese, dried Italian seasoning, salt, and black pepper.
  3. In a skillet, heat olive oil over medium heat and sauté minced garlic for about 1-2 minutes.
  4. Add the sautéed garlic along with the chopped fresh parsley to the mixture.
  5. Gently fold in the ground chicken until just combined.
  6. Preheat your oven to 350°F (175°C).
  7. Grease a 9x5 inch loaf pan.
  8. Transfer the chicken mixture into the loaf pan, shaping it evenly.
  9. Mix melted butter with garlic powder in a small bowl.
  10. Generously apply the garlic butter mixture on top of the shaped meatloaf.
  11. Add a handful of extra grated Parmesan cheese on top.
  12. Carefully pour chicken broth around the meatloaf in the pan.
  13. Place the meatloaf in the preheated oven and bake for 60-70 minutes.
  14. Use a meat thermometer to ensure that the juices run clear.
  15. Let it rest for 10-15 minutes before slicing.
