Making the Meatloaf
- In a large bowl, whisk together the milk and beaten eggs until well blended.
- Stir in the panko breadcrumbs, grated Parmesan cheese, dried Italian seasoning, salt, and black pepper.
- In a skillet, heat olive oil over medium heat and sauté minced garlic for about 1-2 minutes.
- Add the sautéed garlic along with the chopped fresh parsley to the mixture.
- Gently fold in the ground chicken until just combined.
- Preheat your oven to 350°F (175°C).
- Grease a 9x5 inch loaf pan.
- Transfer the chicken mixture into the loaf pan, shaping it evenly.
- Mix melted butter with garlic powder in a small bowl.
- Generously apply the garlic butter mixture on top of the shaped meatloaf.
- Add a handful of extra grated Parmesan cheese on top.
- Carefully pour chicken broth around the meatloaf in the pan.
- Place the meatloaf in the preheated oven and bake for 60-70 minutes.
- Use a meat thermometer to ensure that the juices run clear.
- Let it rest for 10-15 minutes before slicing.
- Cut your meatloaf into even slices and serve immediately.
