Garlic Herb Roasted Chicken

  • 1 whole chicken about 3 ½ to 4 lbs
  • 3 tbsp butter, melted
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 bunch fresh thyme + 1 tbsp chopped
  • 1 head garlic, halved horizontally
  • ½ onion, roughly chopped
  • 1 lemon, sliced for serving

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken dry with paper towels. Remove the giblets, tuck the wings underneath, and tie the legs together with kitchen twine.
  3. In a small bowl, mix melted butter, salt, pepper, and chopped thyme. Rub this mixture all over the chicken, ensuring some gets under the skin.
  4. Stuff the chicken cavity with the halved garlic, onion, and whole thyme sprigs.
  5. Place the chicken breast-side up in a roasting pan and bake for 60-75 minutes, or until the skin is golden brown and a thermometer inserted into the thickest part reads 165°F (75°C).
  6. Spoon the pan juices over the chicken, then let it rest for 15 minutes before carving.
  7. Serve with lemon slices on the side for a fresh finish.
