Preparation
- Preheat the oven to 400°F (200°C).
- Pat the chicken dry with paper towels. Remove the giblets, tuck the wings underneath, and tie the legs together with kitchen twine.
- In a small bowl, mix melted butter, salt, pepper, and chopped thyme. Rub this mixture all over the chicken, ensuring some gets under the skin.
- Stuff the chicken cavity with the halved garlic, onion, and whole thyme sprigs.
- Place the chicken breast-side up in a roasting pan and bake for 60-75 minutes, or until the skin is golden brown and a thermometer inserted into the thickest part reads 165°F (75°C).
- Spoon the pan juices over the chicken, then let it rest for 15 minutes before carving.
- Serve with lemon slices on the side for a fresh finish.
