Garlic Flatbreads in 10 Minutes

  • 2 cups all-purpose flour plus extra for dusting
  • 1 cup Greek yogurt plain and full-fat works best
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons butter melted
  • 2 cloves garlic finely minced
  • 1 tablespoon fresh parsley chopped
  • red pepper flakes a pinch, optional

Method
 

Preparation
  1. In a large mixing bowl, combine the flour, baking powder, and salt until evenly distributed.
  2. Add the Greek yogurt and mix until a soft dough forms. If the dough is sticky, add flour 1 tablespoon at a time until manageable.
  3. Turn the dough onto a lightly floured surface and knead gently for about 30 seconds. Divide into 6 equal portions and roll each portion into a 1/4-inch thick circle.
  4. Heat a non-stick skillet or cast-iron pan over medium-high heat. Cook each flatbread in the dry pan for about 2 minutes on the first side, then flip and cook another 1 to 2 minutes.
  5. Whisk together the melted butter, minced garlic, and parsley. Brush each warm flatbread generously with the garlic butter mixture.

Notes

Brush the flatbreads with garlic butter as soon as they come out of the pan. Store leftovers in an airtight container and rewarm briefly before serving.
