French Beef Bourguignon

  • 2 pounds of beef stew meat
  • 1/4 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 4 tablespoons unsalted butter
  • 12 ounces frozen pearl onions
  • 2 carrots, sliced into 2-inch pieces
  • 2 cloves garlic, minced
  • 2 cups Burgundy red wine
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • 8 ounces brown mushrooms

Method
 

Preparation
  1. Preheat the oven to 325°F (165°C).
  2. Toss the beef in a mixture of flour, salt, and pepper.
  3. In a large Dutch oven, melt butter over medium-high heat. Brown the beef on all sides (about 4-5 minutes). Remove and set aside.
  4. Add pearl onions and carrots to the pot. Sauté until lightly browned, about 4-5 minutes.
  5. Stir in minced garlic and cook briefly before deglazing the pot with Burgundy wine. Scrape up browned bits for added flavor.
  6. Return the beef to the pot. Add bay leaf and thyme. Cover and transfer to the oven.
  7. Cook for 2 hours, then add mushrooms. Return to the oven for another hour.
  8. Serve hot with crusty bread or mashed potatoes.
