- Preheat the oven to 350°F (175°C) and grease a loaf pan with butter or cooking spray. Dust it with flour to prevent sticking.
- Mash the ripe bananas in a large bowl until they're smooth and creamy.
- Whisk together the honey and eggs with the mashed bananas until well combined and slightly frothy.
- Add the vanilla extract and melted butter (or coconut oil) to the banana mixture. Stir well.
- Mix the dry ingredients separately. In another bowl, combine the flour, baking soda, and salt. Gradually add this blend to the wet ingredients, stirring gently until just combined.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
- Cool the banana bread in the pan for about 10 minutes before transferring it to a wire rack.
