Preparation
- Prepare the Dough: In a bowl, combine the room temperature egg and warm milk. Mix well.
- Add instant dry yeast and sugar to the mixture. Stir until the yeast and sugar are fully dissolved.
- In a separate bowl, whisk together bread flour and salt.
- Gradually add the wet mixture to the dry ingredients, mixing until they are well combined.
- Use a hand kneader or your hands to knead the dough until it is smooth and free of raw flour.
- Incorporate 30g of melted unsalted butter into the dough, kneading until it is fully integrated.
- Allow the dough to ferment in a warm place (36-39°C or 97-102°F) for about 1 hour, or until it has doubled or tripled in size.
- Prepare the Filling: Peel and cut the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.
- Drain the potatoes and mash them while hot. Season with salt and pepper to taste.
- Stir in 40g of heavy cream or milk to achieve a smooth, creamy consistency. For a different twist, you can substitute sweet potatoes or sweet pumpkins.
- Add 140g of mozzarella cheese to the mashed potatoes, and mix well. Optionally, mix in other cheeses for extra flavor.
- Assemble the Bread: Once the dough has risen, gently deflate it by pressing it down. Divide the dough into 2 equal parts.
- Shape each portion into a ball, then flatten on a floured surface into a round shape.
- Place the dough rounds on an oven pan, spreading them out slightly.
- Spread the prepared mashed potatoes evenly over each dough round.
- Sprinkle additional mozzarella cheese or your choice of cheeses over the potatoes.
- Fold the edges of the dough over the filling to seal it, and press down to tidy up the ends.
- Cover the pan with plastic wrap and let the dough rest for 10-20 minutes to allow it to rise slightly.
- Bake: Preheat your oven to 160°C (320°F).
- Brush the tops of the dough with milk to achieve a golden color during baking.
- Bake in the preheated oven for 30 minutes, or until the tops are golden brown and the bread is cooked through. Baking time may vary depending on your oven.
- After baking, brush the tops with melted unsalted butter for a shiny finish and extra flavor.
- Garnish with parsley if desired, for a touch of color and freshness.
