  1. Yeast Sponge: 100 ml warm milk (35–40 °C / 95–104 °F)
  2. 1 tbsp (20 g) granulated sugar
  3. 7 g (2 tsp) active dry yeast
  4. 3 tbsp (25 g) all-purpose flour
  5. Fruit Soak: Zest of 1 orange
  6. 70 ml (5 tbsp) fresh orange juice
  7. 50 g (1.75 oz) dried cherries
  8. 50 g (1.75 oz) raisins
  9. 50 g (1.75 oz) dried cranberries
  10. 50 ml (¼ cup) whisky or cognac
  11. Main Dough: 150 ml milk
  12. 4 tbsp (80 g) granulated sugar
  13. 1½ tsp (8 g) vanilla sugar
  14. 2 whole eggs
  15. 2 egg yolks
  16. 600–630 g (4¾–5 cups) all-purpose flour
  17. ¾ tsp (4 g) fine salt
  18. 100 ml (7 tbsp) melted butter
  19. Egg Wash & Topping: 1 egg yolk
  20. 1 tbsp milk
  21. 30 g (2 tbsp) poppy seeds
  22. Powdered sugar, for dusting
