Preparation
  1. Grate and Salt the Zucchini: Grate 2 zucchini and place them in a colander. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture. Squeeze out any remaining liquid.
  2. Combine Ingredients: In a large bowl, combine the grated zucchini, 2 beaten eggs, halved cherry tomatoes, chopped fresh parsley, and minced garlic. Add 60 grams of flour and season with black pepper to taste. Mix until well combined.
  3. Bake the Zucchini: Preheat your oven to 180°C (350°F). Grease a baking dish and spread the zucchini mixture evenly. Sprinkle shredded mozzarella cheese on top. Bake for 25-30 minutes or until the top is golden and the cheese is melted and bubbly.
  4. Combine Ingredients: In a small bowl, mix 60 grams of sour cream and 60 grams of mayonnaise. Add finely chopped fresh cucumber, fresh herbs (dill or parsley), and 1 minced clove of garlic. Season with salt to taste. Mix well to combine all the ingredients.
  5. Serve the Baked Zucchini: Once the zucchini is baked, remove it from the oven and let it cool slightly. Cut into portions and serve hot.
  6. Add the Sauce: Serve the baked zucchini with the fresh herb sauce on the side for dipping or drizzling on top.
