Ingredients
  

For the Shrimp
  • 1 lb Large Shrimp Can substitute with firm white fish
  • 2 tbsp Olive Oil Or avocado oil
  • 1 tbsp Chili Powder Adjust to taste
  • 1 tsp Ground Cumin Can be omitted
  • 1 tsp Smoked Paprika Regular paprika can be used
  • 1 tsp Salt To taste
  • 1 tsp Black Pepper To taste
  • 2 tbsp Lime Juice Fresh is best
For the Mango-Avocado Salsa
  • 1 medium Ripe Mango Can substitute with pineapple or peaches
  • 1 medium Ripe Avocado Or diced cucumber
  • 1/4 cup Red Onion Chopped
  • 1 medium Jalapeño Minced, adjust for spice level
  • 1/4 cup Fresh Cilantro Optional
For the Tacos
  • 8 pieces Corn or Flour Tortillas Use gluten-free if needed

Method
 

Instructions
  1. Marinate the shrimp: In a medium bowl, toss the large shrimp with olive oil, chili powder, ground cumin, smoked paprika, salt, black pepper, and lime juice. Allow to marinate for about 10 minutes.
  2. Prepare the salsa: In another bowl, combine diced mango, ripe avocado, chopped red onion, minced jalapeño, and fresh cilantro. Drizzle with lime juice and season with salt and pepper. Mix carefully.
  3. Grill the shrimp: Heat a grill pan over medium-high heat. Grill the marinated shrimp for 2–3 minutes on each side until pink and opaque.
  4. Warm the tortillas: In a dry skillet or microwave, warm the tortillas until soft. This should only take a minute.
  5. Assemble the tacos: Divide the grilled shrimp among the tortillas, top with mango-avocado salsa, and garnish with cilantro. Serve with lime wedges.

Notes

You can add shredded cabbage or lettuce for extra crunch and color. Store leftover shrimp and salsa separately in airtight containers for up to 2 days.
