- Marinate the shrimp: In a medium bowl, toss the large shrimp with olive oil, chili powder, ground cumin, smoked paprika, salt, black pepper, and lime juice. Allow to marinate for about 10 minutes.
- Prepare the salsa: In another bowl, combine diced mango, ripe avocado, chopped red onion, minced jalapeño, and fresh cilantro. Drizzle with lime juice and season with salt and pepper. Mix carefully.
- Grill the shrimp: Heat a grill pan over medium-high heat. Grill the marinated shrimp for 2–3 minutes on each side until pink and opaque.
- Warm the tortillas: In a dry skillet or microwave, warm the tortillas until soft. This should only take a minute.
- Assemble the tacos: Divide the grilled shrimp among the tortillas, top with mango-avocado salsa, and garnish with cilantro. Serve with lime wedges.
