Ingredients
  

For the Casserole
  • 12 oz Egg Noodles Substitute with whole wheat or gluten-free noodles if desired.
  • 15 oz Canned Pink or Red Salmon Pre-drain and flake for easier mixing.
  • 1 cup Shredded Cheddar Cheese Mild or sharp based on your taste.
  • 1 cup Frozen Peas Or mixed veggies, can substitute with fresh vegetables.
  • 10.5 oz Cream of Mushroom Soup Homemade or any cream soup can work.
  • 1/2 cup Milk Almond milk or non-dairy alternative is suitable.
  • 1/2 cup Sour Cream Can substitute with Greek yogurt.
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Paprika Use smoked paprika for extra flavor if desired.
  • 1 tsp Salt Adjust to taste.
  • 1/2 tsp Black Pepper Adjust to taste.
  • 1 cup Breadcrumbs Panko breadcrumbs can enhance texture.
  • 2 tbsp Butter (melted) Can substitute with olive oil.

Method
 

Directions
  1. Preheat the oven to 350°F (175°C).
  2. Cook the egg noodles according to package instructions until al dente; drain and set aside.
  3. Combine the drained salmon, 1 cup of shredded cheddar cheese, frozen peas, cream of mushroom soup, milk, sour cream, and the seasonings in a large mixing bowl. Stir until well incorporated.
  4. Fold the cooked egg noodles into the mixture gently until evenly mixed.
  5. Transfer the mixture to a greased baking dish, spreading it evenly.
  6. Mix the remaining cheddar cheese, breadcrumbs, and melted butter in a small bowl. Sprinkle over the casserole.
  7. Bake in preheated oven for 25-30 minutes or until the topping is golden brown and the casserole is bubbling.
  8. Let cool for a few minutes before serving.
