Method

How to Make Pumpkin French Toast Roll-Ups
  1. Trim the bread by removing the crusts to create neat rectangles.
  2. In a bowl, whisk together the canned pumpkin puree, brown sugar, ground cinnamon, and nutmeg until smooth.
  3. Spread a thin layer of the pumpkin mixture evenly across each slice of bread.
  4. Gently roll each slice of bread tightly, seam-side down to secure.
  5. In a shallow dish, whisk together the eggs, milk, and vanilla extract until pale and frothy.
  6. Heat a skillet over medium heat and add a pat of butter, melting without browning.
  7. Dip each roll-up in the egg mixture, coating it completely.
  8. Place the coated roll-ups in the skillet, cooking for 2-3 minutes on each side until golden.
  9. In a small bowl, combine granulated sugar and 1 teaspoon of cinnamon.
  10. Coat the cooked roll-ups in the cinnamon-sugar mixture.
  11. Serve warm with a dusting of powdered sugar or a drizzle of maple syrup.
