  • 2 cloves Garlic Minced
  • 1 tablespoon Fresh Thyme Substitute with less dried thyme if necessary
  • 1 cup Baby Spinach Can be replaced with kale or other leafy greens
  • 1 cup Cheese (e.g., Mozzarella or Parmesan) Any melty cheese

  • 2 tablespoons Butter Or olive oil for a dairy-free option
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Pepper Adjust to taste

Method
 

Preparation Steps
  1. Preheat your oven to 200°C/390°F or 180°C fan-forced.
  2. Cut a pocket in each chicken breast, about 3-4 inches wide.
  3. Season the inside and outside of each chicken breast with half the salt and pepper.
  4. Melt butter in an oven-proof skillet over high heat. Add the mushrooms and cook for 3 minutes until golden brown.
  5. Add minced garlic, fresh thyme, and remaining salt and pepper; cook for an additional 2 minutes.
  6. Stir in baby spinach until just wilted.
  7. Stuff each chicken pocket with the mushroom mixture and top with cheese. Seal the pocket with toothpicks.
  8. Wipe the skillet clean, heat oil, and sear the chicken on each side for about 1.5 minutes until golden.
  9. Transfer the skillet to the oven; bake for about 15 minutes until the internal temperature reaches 65°C/149°F.
  10. Rest the chicken for 5 minutes before serving.
