Preparation Steps
- Preheat your oven to 200°C/390°F or 180°C fan-forced.
- Cut a pocket in each chicken breast, about 3-4 inches wide.
- Season the inside and outside of each chicken breast with half the salt and pepper.
- Melt butter in an oven-proof skillet over high heat. Add the mushrooms and cook for 3 minutes until golden brown.
- Add minced garlic, fresh thyme, and remaining salt and pepper; cook for an additional 2 minutes.
- Stir in baby spinach until just wilted.
- Stuff each chicken pocket with the mushroom mixture and top with cheese. Seal the pocket with toothpicks.
- Wipe the skillet clean, heat oil, and sear the chicken on each side for about 1.5 minutes until golden.
- Transfer the skillet to the oven; bake for about 15 minutes until the internal temperature reaches 65°C/149°F.
- Rest the chicken for 5 minutes before serving.
