  • 1/2 cup Unsalted Butter Melted, for brushing between layers.
For the Creamy Filling
  • 1/2 cup Semolina Flour Can be swapped with fine cornmeal.
  • 3 large Eggs Substitute with flaxseed meal or chia seeds for a vegan option.
  • 1 cup Granulated Sugar Feel free to reduce or replace with a sweetener.
  • 2 cups Whole Milk Almond milk works well for a dairy-free version.
  • 1 teaspoon Ground Cinnamon Nutmeg can complement it, but use sparingly.
For the Topping
  • 1/2 cup Honey For drizzling over the finished pie.
  • 2 tablespoons Toasted Sesame Seeds Can be omitted if preferred.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and generously grease a 9x13-inch baking dish.
  2. Brush one sheet of phyllo with melted butter, then layer 6 more sheets, brushing each with butter in between.
  3. In a bowl, whisk together semolina, eggs, sugar, milk, cinnamon, nutmeg, and a pinch of salt until smooth and well-combined.
  4. Pour the creamy filling over your prepared phyllo base, smoothing it out evenly. Top with remaining phyllo layers, brushing each with butter as you go.
  5. Score the top layer lightly. Bake for 40-45 minutes until golden brown and filling is set. Let it cool for 10 minutes.
  6. Drizzle warm honey generously over the baked pie and sprinkle with toasted sesame seeds. Serve warm or at room temperature.
