Preparation
- Wash and dry the eggplants thoroughly.
- Cut off the stems and slice the eggplants into rounds or cubes, depending on your preference.
- Place the sliced or cubed eggplants in a large mixing bowl.
- Add the Italian herbs, paprika, salt, and ground black pepper. Toss well to ensure that all the eggplant pieces are evenly coated with the seasonings.
- Heat a skillet or grill pan over medium heat and add a small amount of olive oil or cooking spray.
- Add the seasoned eggplants to the pan in a single layer. You may need to cook them in batches if they don't fit all at once.
- Cook for about 5-7 minutes on each side, or until the eggplants are golden brown and tender. You can also roast them in the oven at 200°C (400°F) for about 20-25 minutes, turning halfway through for even cooking.
- Remove the eggplants from the pan and place them on a serving platter.
- Sprinkle the chopped green parsley over the top for a fresh burst of flavor.
- Serve hot as a side dish, or enjoy it as a main course with your favorite dip or sauce.
