How to Make Chicken Cordon Bleu
- Preheat your oven to 375°F (190°C).
- Pound boneless chicken breasts to about ¼ inch thick. Layer with ham and Swiss cheese, roll tightly, and secure with toothpicks.
- Dredge each chicken roll in seasoned flour, dip in beaten eggs, and roll in breadcrumbs.
- Heat olive oil and butter in a skillet over medium heat. Sear each chicken roll for 2-3 minutes until golden brown.
- Place chicken rolls in a baking dish and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
- In a saucepan, melt butter, whisk in flour, and gradually add milk to create a roux. Stir in Dijon mustard and Parmesan cheese until creamy.
- Remove toothpicks from chicken rolls, slice, and drizzle with creamy Dijon sauce. Garnish with parsley.
