  • 6 large russet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 1 cup cooked bacon, chopped
  • 1 cup shredded cheddar cheese, plus extra for topping
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Fresh parsley for garnish

Method
 

Preparation
  1. Prepare the Ingredients: Peel and dice the potatoes, chop the onion, and mince the garlic.
  2. Combine in the Crock Pot: Add the potatoes, onion, garlic, and chicken broth into the slow cooker. Stir to combine.
  3. Season: Add dried thyme, paprika, salt, and pepper. Stir well.
  4. Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours, until potatoes are soft.
  5. Make it Creamy: Stir in the softened cream cheese and heavy cream. Use a potato masher to mash some of the potatoes for a creamier texture while keeping some chunks.
  6. Add Bacon & Cheese: Mix in the chopped bacon and shredded cheddar cheese until melted. Adjust seasoning as needed.
  7. Serve: Ladle into bowls, sprinkle with extra cheddar, and garnish with fresh parsley. Enjoy!
