  1. Prepare the Zucchini: Grate the zucchini using a box grater and place it in a bowl. Sprinkle with a generous amount of salt and let it sit for 10 minutes. This will help draw out the excess moisture from the zucchini.
  2. After 10 minutes, squeeze the zucchini to remove as much liquid as possible. You can use a clean kitchen towel or cheesecloth for this.
  3. Mix the Fritter Ingredients: In a large mixing bowl, combine the drained zucchini, eggs, grated cheese, black pepper, Italian herbs, red paprika, breadcrumbs, and flour. Mix everything until well combined.
  4. Form the Fritters: Heat olive oil in a large skillet over medium heat.
  5. Using your hands or a spoon, form small patties from the zucchini mixture. Carefully place them in the hot oil.
  6. Cook the Fritters: Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy. Once cooked, transfer them to a paper towel-lined plate to drain any excess oil.
  7. Prepare the Sauce: Finely chop the pickled cucumbers and place them in a bowl. Add the minced garlic, Greek yogurt (or sour cream), and chopped fresh dill.
  8. Mix everything until well combined. Season with salt and pepper to taste.
  9. Serve: Serve the zucchini fritters hot, with the pickled cucumber and garlic sauce on the side. The combination of crispy fritters and tangy sauce is sure to delight your taste buds.
