  • 2g (½ tsp) salt
  • 100g (3.5 oz) mozzarella cheese, shredded
  • 20g (¾ oz) scallions, finely chopped
  • Black pepper, to taste

Method

Preparation
  1. Boil the potatoes until soft, then mash them.
  2. In a pan, sauté onions and red bell pepper until soft.
  3. Add the sautéed veggies to the mashed potatoes and mix in salt, black pepper, mozzarella, and scallions.
  4. Set aside to cool.
  5. In a bowl, whisk flour, salt, sugar, eggs, milk, and oil until smooth.
  6. Heat a non-stick pan over medium heat and lightly grease it.
  7. Pour a thin layer of batter, swirling the pan to spread evenly.
  8. Cook for 1-2 minutes until set, then flip and cook for another 30 seconds.

  14. Heat oil in a pan over medium heat.
  15. Fry each pancake for 2-3 minutes per side until golden brown and crispy.
  16. Drain on a paper towel.
  17. Enjoy warm with dipping sauces like sour cream, ketchup, or garlic yogurt dip!
