Ingredients
  

For the Rice Cakes
  • 2 cups Cooked Sushi Rice Use short-grain rice for optimum stickiness.
  • 3 tablespoons Rice Vinegar Apple cider vinegar can be substituted.
  • 1 tablespoon Sugar Adjust based on taste preference.
  • 1 teaspoon Salt
  • 1 cup Vegetable Oil Canola or sunflower oil works best.
For the Spicy Salmon Mixture
  • 8 ounces Sushi-grade Salmon Fresh is best; tuna can be an alternative.
  • 3 tablespoons Kewpie Mayo Regular mayo or a vegan version can be used.
  • 1 tablespoons Sriracha Adjust to taste for spice level.
  • 2 tablespoons Scallion Chives can be substituted.
  • 1 tablespoon Soy Sauce Tamari can be used for gluten-free.
  • 1 teaspoon Sesame Oil Omit if not available.
For Toppings
  • 1 medium Sliced Avocado Optional but recommended.
  • 1 medium Jalapeno Optional for extra spice.
  • 1 tablespoon Black and White Sesame Seeds For garnish.

Method
 

Directions
  1. In a bowl, mix rice vinegar, sugar, and salt until dissolved. Combine this mixture with warm sushi rice and stir gently until evenly distributed.
  2. Spread the seasoned rice into a baking pan lined with plastic wrap, pressing down evenly. Cover and chill in the fridge for at least 4 hours or overnight.
  3. Dice the sushi-grade salmon into small pieces. In a bowl, combine the salmon with Kewpie mayo, sriracha, soy sauce, chopped scallions, and sesame oil. Mix well and refrigerate.
  4. Slice the chilled rice into rectangles. Heat vegetable oil in a skillet over medium heat, then fry the rice pieces until golden brown and crispy, about 3-4 minutes on each side.
  5. On a plate, place a crispy rice rectangle. Layer with sliced avocado, a generous spoonful of the spicy salmon mixture, and jalapeno slices. Sprinkle sesame seeds on top and serve.
