Preparation
- Prepare the Mashed Potatoes: Peel and boil the potatoes until tender. Mash them with 10g of butter, adding 2 pinches of salt, 1/2 tablespoon of paprika, and 1/4 tablespoon of black pepper. Mix well.
- Sauté the Vegetables: In a large skillet, heat 2-3 tablespoons of cooking oil over medium heat. Add the chopped onion and red pepper. Sauté until softened, about 5-7 minutes. Add 2 tablespoons of water to help soften the vegetables and prevent sticking.
- Combine Potatoes and Vegetables: Mix the sautéed onions and red peppers into the mashed potatoes until well combined.
- Assemble the Tacos: Lay out the tortillas. Spread a layer of tomato pizza sauce on each tortilla. Spoon a portion of the potato mixture onto one half of each tortilla. Sprinkle a generous amount of mozzarella cheese on top of the potato mixture.
- Cook the Tacos: Fold the tortillas in half to form tacos. In the same skillet, add a little more oil if needed and heat over medium-high heat. Cook the tacos for 2-3 minutes on each side until the tortillas are crispy and the cheese is melted.
- Add Parmesan and Garnish: Once cooked, sprinkle the tacos with grated parmesan cheese. Garnish with fresh or dried parsley if desired.
