  • Salt: 1/2 tsp

  1. Boil the Potatoes: In a pot, boil the potatoes in water for about 20 minutes or until tender. Once cooked, drain the water and allow the potatoes to cool slightly before peeling.
  2. Mash the Potatoes: Mash the boiled potatoes until they are smooth and free of lumps. This will create a creamy base for your potato circles.
  3. Mix Ingredients: In a mixing bowl, combine the mashed potatoes with cornflour, chili powder, and salt. Stir until the mixture is well combined and forms a slightly sticky dough.
  4. Shape the Patties: Take small portions of the potato mixture and form them into small, circle-shaped patties, about 1/2 inch thick. Make sure they are uniform in size for even cooking.
  5. Heat the Oil: Heat cooking oil in a pan over medium heat to approximately 140°C (285°F). This temperature is perfect for frying the patties to achieve that golden, crispy texture.
  6. Fry the Potato Circles: Carefully place the potato circles in the hot oil and fry for about 5 minutes or until they are crispy and golden brown on both sides. You may need to do this in batches to avoid overcrowding the pan.
  7. Garnish and Serve: Once cooked, remove the potato circles from the oil and place them on a paper towel to absorb any excess oil. Garnish with fresh parsley and serve hot.
