- Cut Inner Circle: Take one tortilla and carefully cut about an inch from the edge all around to create a smaller circle inside. Remove the inner circle and dice it for use in the filling.
- Heat Oil: Heat a skillet over medium heat and add a splash of olive oil.
- Sauté Onion: Add the diced onion to the pan and sauté for about 2 minutes until translucent.
- Add Garlic and Tortilla Pieces: Add the minced garlic and diced inner tortilla pieces. Continue to fry for another 2 minutes, stirring frequently.
- Cook Beef: Add the ground beef to the pan. Break it apart with a spatula and cook for 3-5 minutes until browned and cooked through.
- Season: Season with salt, black pepper, and paprika.
- Add Herbs: Stir in the chopped parsley or green onion, then remove the filling from the heat and set aside.
- Lay Tortilla: Lay the larger tortilla flat on a clean surface.
- Add Cheese and Beef: Sprinkle a layer of mozzarella cheese on the tortilla, leaving a border around the edges. Spread the cooked beef mixture evenly over the cheese.
- Top with Smaller Tortilla: Place the smaller tortilla circle on top of the beef. Add more mozzarella around the edge between the two tortilla layers to help seal them when cooked.
- Heat Skillet: Return the skillet to medium heat and add a bit more olive oil or butter.
- Cook First Side: Carefully transfer the assembled tortilla back to the skillet. Cook for about 3 minutes on one side.
- Flip Tortilla: Use a plate to help flip the tortilla over, then slide it back into the skillet to cook the other side for another 2-3 minutes until crispy and the cheese is melted.
- Cool and Serve: Once both sides are golden and crispy, remove from the skillet and let it cool slightly before cutting. Serve warm.
