  • Ham: 100g of cooked ham, diced. Adds a savory, meaty element. You can substitute with cooked chicken or tofu for different variations.
  • Cheese (Optional): 100g of cheese, such as cheddar or mozzarella, shredded. Adds a gooey, melted interior.

  1. Prepare the Potatoes: Peel and chop the potatoes into even-sized chunks. Place them in a large pot of salted water. Bring to a boil over medium-high heat and cook until tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot. Mash until smooth and set aside to cool slightly.
  3. Cook the Vegetables and Meat: Heat a small amount of oil in a skillet over medium heat. Add the finely chopped onion and green pepper. Sauté until the onion is translucent and the pepper is tender.
  4. Stir in the diced ham and cook for another 2-3 minutes until heated through. Add the curry powder, salt, and pepper, mixing well to combine. Remove from heat and let cool.
  5. Combine the Filling: Gently fold the vegetable and ham mixture into the mashed potatoes. If using cheese, mix it in now. Taste and adjust seasoning if necessary. The filling should be flavorful and well-seasoned.
  6. Shape the Croquettes: Scoop the potato mixture and form it into small balls or oval-shaped croquettes, about 1-2 inches in size. Ensure they are compact and well-formed.
  7. Prepare the Bread Coating: Tear the white bread into small pieces and process them into fine crumbs using a food processor. Alternatively, use store-bought bread crumbs.
  8. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with the bread crumbs or frying powder.
  9. Bread the Croquettes: Dredge each croquette in the flour, shaking off any excess. Dip into the beaten eggs, ensuring an even coating. Finally, coat thoroughly with the bread crumbs or frying powder.
  10. Fry the Croquettes: Heat enough vegetable oil in a deep pan or skillet over medium-high heat to cover the croquettes. Once the oil is hot, carefully add the croquettes in batches, making sure not to overcrowd the pan.
  11. Fry until golden brown and crispy, about 3-4 minutes per side. Use a slotted spoon to remove the croquettes and drain on paper towels to remove excess oil.
  12. Serve: Serve the croquettes hot and crispy. They can be enjoyed on their own or with a dipping sauce, such as ketchup, mayonnaise, or a spicy chutney.
