Ingredients
  

For the Pasta
  • 200 g Pasta (rotini or fusilli) Any short pasta like penne works too.
For the Eyeballs
  • 150 g Mini Mozzarella Balls Use larger mozzarella balls for a more exaggerated look.
  • 1 Black Olive Sliced into rounds; kalamata or green olives are alternatives.
For the Salad
  • Cherry Tomatoes Sliced in half; halved grape tomatoes are a substitute.
  • 1 Cucumber Diced; zucchini can be used for different texture.
  • 1 Red Bell Pepper Diced; yellow or orange bell peppers are alternatives.
  • 1 Yellow Bell Pepper Diced; can be omitted if unavailable.
  • 50 g Black Olives Sliced; green olives can substitute or omit for milder taste.
  • 50 g Green Olives Sliced; reduce for fewer olives.
  • Fresh Basil Leaves Chopped; parsley can be substituted.
For the Dressing
  • 3 tbsp Olive Oil Avocado oil provides a unique twist.
  • 2 tbsp Balsamic Vinegar Red wine vinegar or apple cider vinegar can work.
  • 1 tsp Italian Seasoning A mix of dried basil, oregano, and thyme is a substitute.
  • Salt and Pepper To taste.

Method
 

Directions
  1. Cook the Pasta: Begin by cooking the pasta according to package instructions until al dente. Drain and rinse under cold water to cool completely.
  2. Prepare the Eyeballs: Take your mini mozzarella balls and insert half a black olive into each one to form the 'pupils.'
  3. Combine the Vegetables: In a large bowl, whisk together the cooled pasta, halved cherry tomatoes, diced cucumber, red and yellow bell peppers, and sliced olives.
  4. Make the Dressing: In a separate bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, and salt and pepper to taste.
  5. Dress the Salad: Pour the mixture over your pasta and vegetables, tossing until everything is evenly coated with the dressing.
  6. Arrange Eyeballs: Carefully place the prepared mozzarella eyeballs on top of the salad and sprinkle with chopped basil.
  7. Chill and Serve: Chill the salad in the refrigerator for at least 30 minutes before serving.
