Preparation
- Prepare the Ingredients: Chop the onion, slice the carrots and celery, slice the mushrooms, and mince the garlic.
- Peel and slice the Yukon gold potatoes.
- Shred the cooked chicken if not already done.
- Cook the Vegetables: In a large pot, melt 6 tablespoons of unsalted butter over medium heat.
- Add the chopped onion, sliced carrots, and celery to the pot. Cook, stirring occasionally, until the vegetables are tender and the onions are translucent, about 5-7 minutes.
- Add the minced garlic and sliced mushrooms. Cook for an additional 3 minutes, until the mushrooms are softened.
- Make the Roux: Sprinkle the 1/3 cup of all-purpose flour over the cooked vegetables. Stir well to combine and cook for 2 minutes to remove the raw flour taste.
- Gradually add the 6 cups of chicken stock, stirring constantly to prevent lumps. Bring the mixture to a boil.
- Add the Potatoes and Chicken: Add the sliced Yukon gold potatoes to the pot. Reduce the heat to a simmer and cook until the potatoes are tender, about 15 minutes.
- Stir in the shredded cooked chicken, frozen peas, and corn. Cook for an additional 5 minutes.
- Finish the Soup: Reduce the heat to low and stir in the 1/2 cup of whipping cream. Heat through, but do not bring to a boil.
- Season the soup with salt and black pepper to taste.
- Garnish and Serve: Ladle the soup into bowls and garnish with finely chopped parsley.
- Serve hot, with crusty bread on the side if desired.
