- Preheat Oven: Preheat your oven to 375˚F (190˚C). This ensures it’s ready for baking the stuffed mushrooms.
- Prepare Mushrooms: Remove the stems from the mushrooms and place the tops on a baking sheet. Mince the stems finely, as they will be used in the filling.
- Cook Filling: In a pan, melt the butter over medium heat. Add the minced mushroom stems and garlic, cooking for about 2 minutes until they are fragrant and softened.
- Add Spinach: Add the fresh spinach to the pan and cook until it wilts. This only takes a couple of minutes. Once the spinach is wilted, add the cream cheese, salt, and pepper. Stir until the cream cheese is melted and the mixture is well combined, creating a creamy spinach filling.
- Stuff Mushrooms: Take a spoonful of the spinach mixture and fill each mushroom top generously. The mixture should be heaped slightly, as it will settle during baking.
- Add Topping: In a small bowl, mix together the bread crumbs and Parmesan cheese. Sprinkle this mixture evenly over the stuffed mushrooms, creating a crispy, flavorful topping.
- Bake: Bake the mushrooms in the preheated oven for 12-15 minutes, or until they are golden brown and the tops are crispy. Keep an eye on them to ensure they don’t overcook.
- Serve: Serve the stuffed mushrooms warm. They make an excellent appetizer or side dish for any occasion.
