Equipment

  • Skillet
  • large pot

Method

Instructions
  1. Season chicken breasts generously with salt, pepper, and Cajun seasoning. Sear them in olive oil over medium-high heat for 6-7 minutes on each side until golden brown and cooked through; then let them rest before slicing.
  2. Bring a large pot of salted water to a boil. Add your pasta and cook until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain the rest.
  3. In the same skillet, sauté garlic in melted unsalted butter until fragrant, about 1 minute. Add Cajun seasoning and smoked paprika. Stir in heavy cream and chicken broth, simmer for 4-5 minutes until thickened, then mix in grated Parmesan cheese until melted.
  4. Toss the cooked pasta with the sauce in the skillet. If the sauce is too thick, add some reserved pasta water to reach your desired consistency. Finally, mix in the sliced chicken and garnish with fresh parsley.
  5. Serve with a sprinkle of more Cajun seasoning for extra flavor (optional).
