  • 3/4 cup raw whole almonds
  • 1/2 cup sweetened dried cranberries
  • 1/4 cup pitted dates
  • 3/4 cup old-fashioned rolled oats see tip below
  • 2 tablespoons tahini
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon pure maple syrup

Method
 

Preparation
  1. Prepare the Ingredients: Add the almonds, cranberries, and dates to a large food processor.
  2. Process on High until the ingredients are broken into smaller pieces, about 10 to 15 seconds.
  3. Make the Mixture: Add the oats, tahini, lemon juice, and maple syrup to the food processor.
  4. Continue processing until a thick paste forms, about 40 to 60 seconds.
  5. Form the Balls: With your hands, roll the mixture into 25 balls, using about 1 tablespoon of mixture per ball.
  6. Serve and Store: Enjoy the energy balls immediately, or refrigerate in an airtight container for up to 2 weeks.
