How to Make Ravioli Soup
  1. Heat olive oil in a large pot over medium-high heat.
  2. Sauté diced onion, a pinch of salt, and pepper for 3-4 minutes, until softened.
  3. Add minced garlic and Italian seasoning; cook for 30 seconds until fragrant.
  4. Incorporate tomato paste and cook for an additional minute.
  5. Mix in crumbled Italian sausage and cook until browned, about 5-6 minutes.
  6. Pour in chicken broth, crushed tomatoes, and ravioli; season with salt and pepper. Bring to a simmer.
  7. Reduce heat and let it simmer for about 3-5 minutes, until the ravioli is cooked al dente.
  8. Stir in chopped spinach and heavy cream; let the spinach wilt and the soup warm through.
