Classic French Crepes

  • 230g (1¾ cups) all-purpose flour
  • 5g (1 tsp) salt
  • 3 eggs
  • 20g (1½ tbsp) sugar
  • 500ml (2 cups) milk
  • 30g (2 tbsp) melted butter

Method
 

Preparation
  1. In a large mixing bowl, whisk eggs, sugar, and salt until smooth.
  2. Gradually add flour, whisking continuously to avoid lumps.
  3. Slowly pour in milk, stirring until fully incorporated.
  4. Add melted butter and mix until smooth.
  5. Cover and let the batter rest for 15-30 minutes for a smoother texture.
  6. Heat a non-stick pan or crepe pan over medium heat and lightly grease with butter.
  7. Pour ¼ cup of batter into the pan, swirling to spread evenly.
  8. Cook for 1-2 minutes until the edges lift slightly.
  9. Flip and cook for another 30 seconds until golden brown.
  10. Repeat with remaining batter.
  11. Stack the crepes and serve warm with your favorite toppings!
