- Preheat and Prep: Get your oven ready by preheating it to 180°C (350°F). Line your muffin tin with paper liners or lightly grease it with vegetable oil for easy muffin removal later.
- Whisk the Wet: In a large bowl, grab your whisk and give your eggs a good beating until they're lightly combined. Then, add the vegetable oil, milk, and sugar. Keep whisking everything together until it's well combined and smooth.
- Dry Mix Magic: In a separate bowl, sift together the flour, baking powder, and salt. This step helps aerate the dry ingredients, leading to lighter and fluffier muffins.
- Wet Meets Dry: Gradually, add the dry ingredients to the wet ingredients. Mix everything together with a spoon or spatula just until combined. Be careful not to overmix! Overmixing can lead to tough muffins.
- Muffin Magic: If you're using raisins or chocolate chips, now's the time to gently fold them into the batter using a spatula.
- Fill and Bake! Spoon the batter evenly into your prepared muffin tin, filling each cup about 2/3 full. Pop them into the preheated oven and bake for 18-20 minutes. Keep an eye on them! A toothpick inserted into the center of a muffin should come out clean when they're done.
- Cool Comfort: Once the baking time is up, take the muffins out of the oven and let them cool in the tin for a few minutes. Then, transfer them to a wire rack to cool completely before enjoying!
