Classic Apple Pie Filling

  • 9 cups fresh apples, peeled, cored, and chopped into uniform sizes
  • 2 tablespoons lemon juice
  • 3 cups white sugar
  • 2 tablespoons brown sugar
  • 1/2 cup cornstarch
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon coarse sea salt
  • 4 cups water

Preparation
  1. In a large bowl, toss the apples with the lemon juice to prevent browning. Set aside.
  2. In a large Dutch oven or saucepan, stir together both sugars, cornstarch, cinnamon, nutmeg, and salt.
  3. Add the water and bring to a low simmer over medium heat, stirring constantly.
  4. Once the mixture starts to thicken, add the apples and return to a low simmer. Cover and cook for 6-10 minutes, depending on the size of the apple pieces. Apples should be fork-tender, and the sauce should be thick and glossy.
  5. Remove from heat and allow to cool before using in pies, pastries, or other desserts.
  6. Store in the refrigerator for up to 5 days or freeze for up to 6 months.
