  • 1 cup oat flour can be substituted with almond flour
  • 2 tablespoons maple syrup or honey; consider sugar-free option
  • 1 large egg for binding
  • 3 large egg whites liquid egg whites or aquafaba can be a vegan alternative
  • 1 cup preferred milk almond, coconut, or regular milk
For the Filling
  • 1 cup Greek yogurt can swap for dairy-free yogurt
  • 2 tablespoons granular sweetener such as erythritol, stevia, or coconut sugar
  • 1 teaspoon ground cinnamon increase for more pronounced cinnamon flavor

Method
 

Crepe Preparation
  1. In a mixing bowl, combine oat flour, maple syrup, egg, and egg whites. Whisk until smooth and free of lumps.
  2. Heat a nonstick skillet over medium heat. Pour 1/3 cup of the batter into the skillet, swirling to create an even shape. Cook for 1-2 minutes, then flip and cook for another minute.
Filling and Assembly
  1. In a separate bowl, mix Greek yogurt, sweetener, and ground cinnamon until creamy.
  2. Take one crepe and spread a generous amount of the cinnamon yogurt filling over it. Roll it up tightly.
  3. Mix sweetener and additional cinnamon in a small bowl. Sprinkle over the rolled crepes.
