Crepe Preparation
- In a mixing bowl, combine oat flour, maple syrup, egg, and egg whites. Whisk until smooth and free of lumps.
- Heat a nonstick skillet over medium heat. Pour 1/3 cup of the batter into the skillet, swirling to create an even shape. Cook for 1-2 minutes, then flip and cook for another minute.
Filling and Assembly
- In a separate bowl, mix Greek yogurt, sweetener, and ground cinnamon until creamy.
- Take one crepe and spread a generous amount of the cinnamon yogurt filling over it. Roll it up tightly.
- Mix sweetener and additional cinnamon in a small bowl. Sprinkle over the rolled crepes.
