- Open the can of cinnamon rolls and set the icing aside for now. Slice each roll into 4–6 bite-size pieces.
- In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until uniform.
- Heat a non-stick skillet or griddle over medium heat and add the butter. Once melted and foaming, reduce heat slightly.
- Dip each cinnamon roll piece into the egg batter, coating all sides, then place in the pan in a single layer.
- Cook for 2–3 minutes per side until golden brown and cooked through, turning carefully with a spatula.
- Transfer bites to a plate and immediately drizzle with reserved icing or maple syrup. Dust with powdered sugar if desired.
