Chocolate Chip Cheesecake Cookies

  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups semi-sweet chocolate chips

  1. Prepare the Cookie Dough: Cream butter, granulated sugar, and brown sugar until fluffy (2-3 minutes).
  2. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix into wet ingredients until just combined.
  4. Fold in chocolate chips gently with a spatula.
  5. Make the Cheesecake Filling: Beat softened cream cheese, sugar, and vanilla extract until smooth and creamy. Chill briefly if needed.
  6. Assemble the Cookies: Scoop 1-2 tablespoons of dough, flatten into a disc. Add 1 teaspoon of cheesecake filling to the center.
  7. Cover with another disc of dough and seal edges by pinching gently. Roll into a smooth ball.
  8. Bake: Preheat oven to 350°F (175°C).
  9. Place dough balls 2 inches apart on a parchment-lined baking sheet. Bake for 12-15 minutes, until edges are golden and centers are just set.
  10. Cool on a baking sheet for 5-10 minutes before transferring to a rack.
