  • 2 bell peppers, chopped: These add a sweet and slightly tangy flavor, along with a vibrant color to the fritters.
  • 3 eggs: Eggs help bind the ingredients together, ensuring the fritters hold their shape during cooking.
  • 3 tablespoons flour: Flour adds structure to the fritters, helping them hold together and adding a slight chewiness.
  • 100g breadcrumbs (about 1 cup): Breadcrumbs create a crunchy coating that contrasts beautifully with the soft interior.

Method
 

Preparation
  1. Prepare the Vegetables: Begin by washing and finely chopping the Chinese cabbage.
  2. Peel and cut the potatoes into small cubes, and chop the onion and bell peppers.
  3. If using chili peppers, chop them finely.
  4. Cook the Potatoes: Boil the potato cubes in salted water until they are tender but not mushy. Drain and set aside to cool.
  5. Sauté the Onion and Peppers: In a large skillet, heat some olive oil over medium heat. Add the chopped onion and sauté until translucent.
  6. Add the bell peppers (and chili peppers if using) and continue to cook until the peppers are soft. Set aside to cool.
  7. Mix the Ingredients: In a large mixing bowl, combine the cooked potatoes, sautéed onions and peppers, and chopped Chinese cabbage.
  8. Beat the eggs in a separate bowl and add them to the mixture, stirring to combine.
  9. Add the flour, breadcrumbs, and salt, mixing until all ingredients are well incorporated.
  10. Shape the Fritters: Take small handfuls of the mixture and shape them into patties. Make sure they are compact so they don’t fall apart during frying.
  11. Fry the Fritters: Heat a generous amount of olive oil in a large frying pan over medium heat.
  12. Fry the fritters in batches, being careful not to overcrowd the pan. Cook each side until golden brown and crispy, about 3-4 minutes per side.
  13. Remove the fritters from the pan and place them on a plate lined with paper towels to drain excess oil.
  14. Serve: Serve the fritters hot, garnished with fresh herbs if desired. They pair wonderfully with a dipping sauce or a side salad.
