  1. Prepare the Chicken: Start by pounding the chicken breasts thin, ensuring they are of even thickness. Season both sides with salt and black pepper.
  2. Coat the Chicken: In a shallow dish, beat the eggs and set aside. In another dish, combine the flour with a pinch of salt and black pepper. Dip each chicken breast into the flour mixture, then into the beaten eggs, ensuring they are well-coated.
  3. Cook the Chicken: Heat a generous amount of olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. Prepare the Topping: In the same skillet, add a bit more olive oil if needed and sauté the diced paprika (bell pepper) and minced garlic until soft and fragrant. Reduce the heat and stir in the sour cream, grated cheese, and cherry tomatoes. Cook until the cheese is melted and the mixture is well-combined.
  5. Assemble the Dish: Place the cooked chicken breasts back into the skillet, spooning the cheesy mixture over each piece. Cover the skillet and let the chicken cook for another 2-3 minutes, allowing the flavors to meld together.
  6. Serve: Garnish with freshly chopped parsley and serve hot. This dish pairs wonderfully with a side of steamed vegetables, rice, or a fresh salad.
